Recipe: Thai Sweet Potato Hash

Thai Sweet Potato Hash

Prep Time 30 minutes
Cook Time 20 minutes
Total Time 50 minutes


  • cups sweet potatoes diced, cooked, drained well, and cooled
  • 3 tbsp. canola, safflower, or grapeseed oil
  • 1 small onion, diced
  • 2 tsp. garlic, minced
  • 1 tbsp. chopped fresh basil
  • 1 tbsp. chopped fresh mint
  • 1 tbsp. chopped fresh cilantro
  • Salt and pepper to taste


  1. Heat the oil in a large non-stick pan over medium heat.

  2. Add the onions and sauté for about 5 minutes.
  3. Add the garlic and sweet potatoes and sauté.
  4. Spread out the sweet potatoes in an even layer in the pan and continue to cook.
  5. Stir every 3 to 4 minutes, returning the potatoes to an even layer each time.
  6. Add the basil, mint, and cilantro. Season with salt and pepper to taste.
  7. Cook sweet potatoes until they begin to turn golden brown and crisp.
  8. Serve immediately and enjoy!
