Sweet Chickpea Salad

Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes


  • 1 ripe peach diced
  • ½ medium-size jicama Mexican turnip, diced
  • 1 can chickpeas drained and rinsed
  • 1 ripe avocado diced

Dressing Ingredients

  • 1 tbsp. olive oil
  • ½ lime juiced
  • tsp. garlic powder
  • tsp. cumin powder
  • tsp. sea salt
  • tsp. black pepper


  1. In a medium bowl, combine peach, jicama, and chickpeas.

  2. In a small bowl, whisk together dressing ingredients.
  3. Pour the dressing into the medium bowl and toss completely.
  4. Add the avocado and fold in gently.
