Quinoa (pronounced “keen wah”) is an edible seed but is categorized as a nutritious whole grain loaded with fiber and protein. It’s also considered a complete protein because it contains all nine of the amino acids necessary to support a healthy body.
Quinoa is rich in magnesium, folate, thiamine (B1) and more, and for anyone with a food sensitivity or allergy, it’s naturally gluten free.
Roll mixture into 1-inch balls and place on a plate or baking sheet (you should get 20-24 balls)
Refrigerate 10–15 minutes to chill slightly
Transfer to an airtight container or bag and store in the refrigerator
