Recipe: Coconut and Quinoa Energy Bites

Quinoa (pronounced “keen wah”) is an edible seed but is categorized as a nutritious whole grain loaded with fiber and protein. It’s also considered a complete protein because it contains all nine of the amino acids necessary to support a healthy body.

Quinoa is rich in magnesium, folate, thiamine (B1) and more, and for anyone with a food sensitivity or allergy, it’s naturally gluten free.

Dates and coconut have added health benefits as well. Just be careful not to eat too much coconut, as it’s high in saturated fat.


Coconut and Quinoa Energy Bites

Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes


  • 1 medium lime
  • 2 cups of pitted dates
  • 1 cup of coconut flakes
  • ¼ teaspoon of vanilla extract
  • ¼ cup of cooked white quinoa
  • ½ cup of water but you will need only a few teaspoons


  1. Zest and juice one lime
  2. Place all ingredients into a food processor. Pulse to roughly break up the ingredients
  3. Continue to process until mixture comes together in a large ball
  4. If after one minute your mixture still isn’t coming together, add one teaspoon of water at a time until mixture comes together
  5. Roll mixture into 1-inch balls and place on a plate or baking sheet (you should get 20-24 balls)

  6. Refrigerate 10–15 minutes to chill slightly

  7. Transfer to an airtight container or bag and store in the refrigerator
