Broccoli Spinach Pesto Dip

Prep Time 5 minutes
Cook Time 30 minutes
Total Time 35 minutes


  • 3 cups broccoli chopped
  • ½ cup cashews
  • 1 tbsp. olive oil
  • 2 cloves garlic
  • 1 avocado
  • ½ lemon juiced
  • 1 tbsp. nutritional yeast
  • 1 cup spinach
  • 1 cup basil
  • ¼ cup sun-dried tomatoes


  1. Preheat oven to 425°
  2. Put chopped broccoli on a baking sheet and drizzle a tablespoon of olive oil on top. Roast for 5 minutes in the oven.
  3. Sprinkle minced garlic over the broccoli. Add cashews to a separate section of the baking sheet. Roast for 8–10 more minutes.
  4. When cashews are roasted with a golden color, take the baking sheet out of the oven to cool for about 5 minutes.
  5. Process the avocado, lemon juice, spinach, and basil. Add water as needed.
  6. Add the cashews to the processor in small portions.
  7. Add roasted broccoli and sun-dried tomatoes to the processor. Add water as needed.
  8. Process until smooth.
  9. Serve with chopped veggies of your choice.
